Summer Recipes

My Sweet Hubby is finally home! In honor of his being home and since he hasn't grilled out in 9 long days, I have decided he will cook dinner every night for the next 5. He is off from work and what else does he have to do with his time other than please me? I've decided to put together some nice menus and I'm coming up short with ideas. I love recipes with fresh and simple ingredients and that are fairly easy to make at this time of year. I thought I'd share one of my all time favorite warm weather recipes with you from the first Barefoot Contessa cookbook and I'd love for you to share your favorite with me. Fresh Corn Salad
5 ears of corn, shucked
1/2 cup small-diced red onion (1 small onion)
3 tablespoons cider vinegar
3 tablespoons good olive oil
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup julienned fresh basil leaves

In a large pot of boiling salted water, cook the corn for 3 minutes until the starchiness is just gone. Drain and immerse it in ice water to stop the cooking and to set the color. When the corn is cool, cut the kernels off the cob, cutting close to the cob.
Toss the kernels in a large bowl with the red onions, vinegar, olive oil, salt, and pepper. Just before serving, toss in the fresh basil. Taste for seasonings and serve cold or at room temperature.

  1. The corn salad sounds delish! I made Ellie Krieger's fish tacos with chipotle cream this week and loved them! They were so easy to make and tasted great!! One of my girlfriends has been trying a lot of her recipes lately and says they're all very good, and they're healthy!

  3. I made the corn salad last year - yum! I love all Barefoot Contessa books! I made her meatloaf the other night and my husband said it's the best meatloaf he's ever had! :)

  4. That sounds really yummy!
    I like to make Italian potato salad.
    Boil some red or purple potatoes.
    Chill and then slice them. Add chopped celery, a half of a small red onion. Oregano, garlic salt and black pepper to taste. Olive oil and wine vinegar. All to taste. Chill over night. Be sure to mix well so all of the flavors meld. Amounts are flexible. You make as much or as little as you need for the amount of people you are having.

  5. Can't wait to try this salad. I was just looking through my cookbooks last night for something new and fun to make. The Late Night Pasta is fast and delicious from Emirel and the Not Yo Mamas Banana Pudding is from Paula Deen. The rest are family favorites and worth a try!

  6. Jen, do you ever make it to the farmer's markets. I think most of them open next weekend around here! Anyway, one of my favorite dishes is and Eggplant Caviar. You roast sweet red pepper, eggplant and some tomatoes. Peel and seed the pepper. Dice the eggplant. The tomatoes will be mush. Saute a couple of cloves of garlic (unless you do it the Emeril way and then do half a head!) in some olive oil. Add the prepared vegetables and some salt. Cook about 15 minutes. It is best at room temp. I like to make it in the morning and then have it with dinner.

  7. Have you ever made the Sun-Dried Tomato Dip from that book? My friend Hilary calles it "To-Die-For Dip!"

    My fave summer dish is a big pasta salad with whole-wheat spirals, cubed mozzarella and salami, cucumber, tomato, artichoke hearts, black olives, and Italian dressing!

    I guess I need to make some summer salads for the upcoming weekend, huh?

  9. I have all of Ian's cookbooks and they are by far my favorite. I don't think I have every made anything that we haven't loved. I make the corn salad often, but my absolute favorite is her Grilled Vegetable Orzo Sald with Feta....yummy!! Glad your hubby is home. Mine returns late this evening!!

  12. That cookbook is one of my favorite! I love her guacomole! There is a corn chowder that is delish although I have to halve the recipe. Nice blog you have over here!

  15. this one is very simple but my girls love it---her bowtie pasta & brocoli...yummy yummy yummy.
    great side with grilled salmon.

    I'm glad that your hubby is home---I know how much you missed him!

  18. Oh Jen, you are a girl after my own heart! I do the same thing to my hubby. He doesn’t travel but he works long hours. So I have the girls and most of the responsibilities most of the time. So when he is home, I say "here you go it's all yours"! What’s for dinner? He He! I posted my favorite apple pie on my blog. It is not exactly light, or super easy but it is a summer favorite and usually a hit with whoever I make it for.
