A Better Cookie


I'm on a mission to get healthier which is in direct odds with my love/need to bake. Add in my sweet tooth, (actually I think I have a whole mouth full of sweet tooths) and I've been driven to search for healthier alternatives. This recipe is a keeper.


Low Fat Oatmeal Cookies That Don't Taste Like Low Fat Oatmeal Cookies

That's the official recipe name. Okay, maybe it isn't, but it should be.

1 cup all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tbsp butter, room temperature
1/4 c plain apple sauce
1 large egg
1 tsp vanilla extract
1/2 cup white sugar
1/2 cup brown sugar
2 cups quick cooking oats
1/2 cup chocolate chips

Preheat oven to 375F. Line a baking sheet with parchment paper.
In a medium bowl, whisk together flour, baking powder, baking soda and salt.

In a large bowl, cream together the butter and the sugars. Beat in the egg, followed by the applesauce and the vanilla extract. Working by hand, stir in the flour mixture and the oats until just combined and no streaks of flour remain. Add chocolate chips just before the batter comes together.

Drop tablespoonfuls onto the prepared baking sheet. Bake for about 9-12 min at 375F. Cookies will be light brown at the edges, but will not get as dark and golden as regular cookies.
Let cool on sheet for 3 or 4 minutes, then transfer to a wire rack to cool completely.
Store in an airtight container. Make sure it's a cute one. It makes the cookies taste better.
Makes 2 dozen cookies minus however much cookie dough you ate before the cookies got baked.


You could make these without chocolate chips, but why would you want to? P.S. Emma swears these are even better than the full on butter filled version. I don't think I'd go that far but I will say that you won't in any way feel cheated by your cookie experience.

  9. I will be trying out your recipe for sure. I'm working hard to get healthy and so haven't baked in a few weeks because I don't trust myself with fresh yummies!

I love that cookie jar (World Market?) but it wouldn't work in my house...so I'm glad you have it and it soooo works in your new kitchen. And I love your LOVE banner. Wish I had been in that class.   14. i had to stop baking after gaining a few pounds. For valentines day i made the boys a pretzel brownie that was amazing, like 2 whole sticks of butter and buttercream frosting amazing, it is so hard to watch calories when you love to bake {eat}.
