I do th...Oh Jen, you are a girl after my own heart! I do the same thing to my hubby. He doesn’t travel but he works long hours. So I have the girls and most of the responsibilities most of the time. I think most of them open next weekend around here! Anyway, one of my favorite dishes is and Eggplant Caviar. You roast sweet red pepper, eggplant and some tomatoes. Peel and seed the pepper. Dice the eggplant. The tomatoes will be mush. Saute a couple of cloves of garlic (unless you do it the Emeril way and then do half a head!) in some olive oil. Add the prepared vegetables and some salt. Cook about 15 minutes. It is best at room temp. Add chopped celery, a half of a small red onion. Oregano, garlic salt and black pepper to taste. Olive oil and wine vinegar. All to taste. Chill over night. Be sure to mix well so all of the flavors meld. Amounts are flexible.
