From my Kitchen to Yours
Okay, well that's not really my kitchen but a girl can dream. Here is the recipe for the pie for those of you who are dying to make it.
Jen's Freaking Awesome Oatmeal Pie
1 9" pie crust (I really like the Barefoot Contessa crostada dough recipe)
2 large eggs
1/2 stick melted butter
1 teaspoon vanilla extract
2/3cup brown sugar
1/3 cup light corn syrup
1/3 cup dark corn syrup
2/3 cup old fashioned oats
1 (generous) cup chocolate chips
Preheat oven to 350°. Make pie crust and set aside. In a medium bowl, beat the eggs and then add melted butter, vanilla, sugar and corn syrup and continue to whisk until well incorporated. Fold in oats and chocolate chips and pour into uncooked pie crust. Bake aprox 45 mins or until the crust is golden and the filling is firm to the touch. Let cool on a wire rack for 15 minutes if you can stand it.
Notes:
This pie goes great with a viewing of the movie Waitress.

ReplyDeleteWOW Jen! I supersized the kitchen pic as it is a much more expensive version of my own. I was pining for those marble counter tops when I noticed the vase on the right in the pic is the EXACT one my Grama gave me. It was in our home all through my chilldhood and I thought it must be one of a kind.

What a trip..as I was cruising blogland to see my picture here...I surprised myself and had to blink. Looks like a yummy recipe...anything with choc and oat..I have an oatbar recipe on my blog...and it sounds similiar...
