Recipe of the Week- Jen's Lemon Vinaigrette & A Rant

Well, Sweet Hubby is home. I don't think I'm speaking to him though. He knew what I was doing the whole time. Turns out he reads my blog. Who knew? He read of my evil plan & actually had the nerve to keep that information secret from me. Can you imagine being so sneaky with your spouse? So every time he asked me what I was doing or what my plans for the day were? He knew. Every time I almost blew the surprise by mentioning I had to run out for paint rollers or that I was sore and tired from painting? He knew. The. very.nerve.of.that.man.


Lemon vinaigrette
1 large or 2 small cloves garlic
2 Tbsp white wine vinegar
2 Tbsp fresh lemon juice
1 tsp dijon mustard (there is no substitute for dijon)
1 tsp sugar or splenda
1/2 tsp salt
1/4 tsp ground pepper
1 cup olive oil

Combine all ingredients except olive oil in a food process and pulse til garlic is minced. Add olive oil in a slow, steady stream. Pour into jar with lid and shake before pouring on salad.

Notes: This recipe can be done by hand as well, mincing the garlic and then whisking the other ingredients together but you girls know I have to use my new food processor whenever I can justify it. I think this would also make a great marinade.

    I have a paint related question for ya. Can you find out the color of the wall paint in that one dining room photo you showed with the straw hats hanging on the light fixture? That's the color I'm searching for.
