Hello Cupcake

I have recently developed an addiction to cupcake toppers. In order to justify this addiction I must make cupcakes. This seems like a reasonable sacrifice to make. I made these festive Red Velvet Cupcakes using this recipe but using my own cream cheese frosting recipe. Topping them with a little crushed candy cane gave them the perfect Christmas touch but I can't lie, they are best in their pure state.

Jen's Cream Cheese Frosting
8 oz cream cheese, softened
1/4 cup butter, softened
1 1/2 tsp vanilla extract
5 cups powdered sugar

Beat together all ingredients except the powdered sugar until smooth and fluffy. Add half of the powdered sugar beating until incorporated and then add the rest. Add more powdered sugar or vanilla as needed for desired consistency. Makes about 3 2/3 cups.

  3. Oh Jen, I am in love with the little snowmen cupcake toppers, and now you have made me want to go bake cupcakes! Red velvet cupcakes with cream cheese frosting just happen to be my absolute favorite!
