My Cup Runneth Over

Was that really a week and a half ago I said I'd be back with something I do like about my kitchen? Life continues to get in the way of my creative pursuits. Little life things, like tires that have a habit of finding rogue screws, children with 4 day weekends (already?) and a hubby who decided to have a last minute surgery to remove 46ish lipomas.

Since we aren't using the cabinets in our kitchen we've had to get creative with storage. This bottle rack has served us well and given me an excuse to buy pairs of pretty coffee cups. The only problem is, I don't actually like coffee. It forces me to find other excuses to use them: cocoa, cereal, ice cream...

MUG BROWNIES

Yes. Mug brownies. I feel bad doing this to you. They are evil. On the plus side, it only makes one serving. So actually I'm doing you a favor? It will keep you from eating half a pan of brownies, right?

Mug Brownie
4 Tbsp flour
4 Tbsp sugar
2 Tbsp unsweetened cocoa
2 Tbsp vegetable oil
2 Tablespoons Water
Pinch of salt
Chocolate chips

Put dry ingredients in mug and stir. Add oil and water and mix well. Microwave 1 minute or until desired degree of chocolatey doneness has been achieved. We like ours a little on the soft and gooey side. Then sprinkle with a smattering of chocolate chips. You know, in case it wasn't chocolatey enough.

It's probably best to have someone else make this for you so you don't have to think about what's in it. This stuff is no joke. It's rich. And dreamy. You may want to share with someone you love. Then again you may not.

  1. OMG! These look scrumptious! And you make them one serving at a time? This is perfect. So when I get a chocolate craving I make one brownie instead of a whole tray. Then, I can only eat one - NOT SEVEN!! I like it. Thanks for sharing!

  9. I have that same cup! (The first one...I guess I also have the initial one, but mine has an L). I love them. And the cups hanging up are so cute. I might have to try that even though my cabinets are fine. : )

  10. These sound WONDERFUL...and especially for college dorm rooms! I needed an idea for a care-package gift, and you just gave me one! :) I'm going to mix the dry ingredients together in (several) little bags and tuck them inside a mug. I think it'll be greatly appreciated. Thanks for the idea! I'll probably post it on my blog, giving you full credit of course! :)

  11. i'll have to give this recipe to henry. he's obsessed with brownies, and if he could make himself a cup of one and not leave a whole pan sitting on the counter, that would be fantastic. and b) how can you not like coffee?! ;o)

  12. What a cute and fattening idea! I love it. I finally bought my own Anthropologie mug last week and posted about it today. I mentioned you were the one who inspired me to buy it. Enjoy your weekend. How's the demo going?

and i didn't know (or had forgotten) you don't drink coffee. at all? do you drink tea? i used to only drink it as a treat (the frou frou kind) or a normal cup with an evening dessert. but lately, i've been grabbing the last cup from brent's coffeepot in the morning.

  15. Brownies look divine! I'll definitely have to try it. Also love your mugs, especially the one with the blue bird with a crown above it's head. Where did you get that one? I would love to add it to my collection of mugs. I drink my Community Coffee from Louisiana out of a different mug/cup each morning. If you tried CC, you might change your mind about coffee. It's so smooth... perfect with cream and sugar!

  21. I saw this post the other day and had to come back for your recipe. I couldn't get it out of my mind!

Also I have been eyeing those bottle racks for some time since my house has limited cabinet space. When I checked on-line, they were so expensive! I was so excited to find one at HomeGoods recently for almost nothing! Mine is shorter with only 2 rows but it holds 12 mugs. It was great to free up that space in my cabinet! We have to get really creative living in small "cottages" : )
