Jen Recommends


A quick post to say I'll see you after the holiday! I hope all of you have a wonderful day. I'm looking forward to getting caught up with all of you later in the week as the madness of the holiday winds down. I noticed several new people left comments on my last post and I'm looking forward to coming to visit all of your blogs. I wanted to leave you with a recipe that you might like to try for Granola Bars. They are easy, delicious and keep well. I also wanted to share some Flickr magic with you that is inspired by the 4th of July.


Granola Bars
2 1/2 cups rice crispies
2 cups quick cooking oats
1/2 cup raisins (optional)
1/2 cup light corn syrup
1/2 cup brown sugar
1/2 cup peanut butter
1 tsp vanilla extract
1/2 cup chocolate chips
Combine cereal, oats and raisins in a large bowl. In a small saucepan, heat the corn syrup and brown sugar to a boil, stirring constantly. Remove from heat. Stir in peanut butter and vanilla and blend until smooth. Pour this over the cereal mixture and mix well. Add chocolate chips and mix thoroughly. Press into an ungreased 9x13 pan. Cool. Cut into bars.

  18. Oh, those granola bars are my favorite. I used to make them by throwing some homemade granola into a bowl and guessing how much butter, syrup and marshmallows to add before baking, but your recipe sounds much more reliable--and delicious. Thanks for sharing.

    I just read your comment and visited your fabulous blog. I read both new & old posts and was entranced. I knew I had to add you to my Blogs To Visit. But, I thought that I should warn you about scanning photos from magazines and books.

    Yes, everyone does it but many photographers are starting to look for sites that use their photos-- and demanding payment or threatening law suits for unauthorized use. If you've credited the photographer (photo by Tweedle Dee from Martha Stewart Living), they tend to be less angry.(they figure it could lead to more work)

    Many people don't realize that photographers (or sometimes the magazine and book publishers) own the copyright to each photo and resell them to various mags and ad agencies or reuse them in their own publications. They don't want them being used for free.

    Just a word to the wise. I have Dan Mayers permission to use any of his photos in conjunction with our book. I use photos from companies (always crediting them) but not from other photographers (who would expect me to pay a fee to put their work on my blog).

    Sorry to be the bearer of bad news but it's better to know than get slapped with a lawsuit.

    Just saw your comment - let me know if you can't find the mix and I'll send you some. Being Swedish you have to at least try them (even though they are Dutch pancakes in our house). There is a trick to getting the right thickness - I like them fairly thin, so I use the back of a spoon to spread the batter thinner after pouring it in the pan. Anyway, I am at the store all of the time with 3 kids, so let me know if you can't find it.

    The compliments for your blog come easily.
