Fire Roasted Tomato Soup

Seriously you guys are the sweetest, most supportive blog friends ever. Thanks for that. I heart you all! I really do. As your reward I'm going to share with you an awesome soup recipe. I've been very into soups this year. We have a chain here called Paradise Bakery and Cafe and I eat there as much as possible. I'm in love with their Fire Roasted Tomato Soup and I decided to try to replicate it. I'm not bragging but my family says they like mine better. Did you hear that? Mines b-e-t-t-e-r. Not that I'm bragging.

So that picture of the can happened naturally, if you can believe that. I went around showing my family in amazement rather glad it was a smiley face and not a likeness of Jesus which, quite honestly, would have freaked me out a bit. My family all rolled their eyes at me for taking pictures of it, but you all get it, right? You would have taken pictures of it too, right? How else will I remember when I'm 90 that I once happened to have a can of tomatoes that smiled at me?


Jen's Fire Roasted Tomato Soup
2 medium onions, diced
3 cloves garlic, minced
olive oil
28 oz can San Marzano whole tomatoes (I buy them at Fresh Market)
14 oz can Muir Glen fire roasted diced tomatoes (I buy them at SuperTarget)
8 oz can tomato sauce
6 oz can tomato paste
32 oz chicken stock
2 tsp salt
1/2 tsp pepper
2 cups milk

In a dutch oven saute onion in olive oil until almost translucent. Add garlic and continue to saute a few minutes more. Add tomatoes, sauce and paste as well as stock. Bring to a boil, cover and reduce heat to simmer for 30 minutes. Puree in blender, or with immersion blender until desired consistency. (I like mine slightly chunky but you should puree until your hearts content) Add milk and seasonings and continue to simmer for another 5 or 1o minutes.

Notes:
I used skim milk, which was de-lish and saved me some calories but if you are feeling bold use something richer. I highly recommend you use the San Marzano tomatoes if you can find them. There is just something special about them. Feel free to check for seasonings and alter to your taste. I served this with grilled american & mozzarella cheese sourdough sandwiches.

Enjoy! There is something about making and eating soup from scratch that just nourishes the soul.

  1. Jen - what a great photo! :-) I would have taken a pic of that too! Re: your recipe - that looks delish! Do you think this would freeze well? I am always looking for great recipes I can prepare and freeze for later - late nights when I come home and need to get a dinner on the table pronto!!

  3. I go through cans of that same brand of tomatoes for marinara and pizza sauce. My kids eat them right out of the can! Love the smilely face...how cute. Thanks for sharing the recipe - will definintely try it.

  14. We love soup in the winter. Our family hosts "soup and some" parties. Soup...we ask friends to bring something special to share with a group, and Some...we make that up as we go along. Could be some...football, some....bon fire....some....game playing. But we always have some.....fun! I can't wait to try your recipe.

  18. Yet, one more place that I miss terribly--Paradise. I treated myself at least once a week to lunch at the one at Clay Terrace! We have them here in Dallas, but it's quite a drive to get there.

    I may have to give this recipe a try.

  28. Jen, Today my hubbie and I went to the Indianapolis Home Show and had a great time. After, we went to one of the Paradise Cafes. I had the "Fire Roasted Tomato Soup" and loved it, so I went on line to find a similar recipe. I will be trying yours soon! I was looking back at your blog to June 2007 re: Japanese Beetles. Several years ago I picked zillions off my flowers spending hours daily doing it. We did two different thing the first year they were so bad on my roses and even zinnias. First, we did the "no-no" of using the attracting bags. Our property borders on a swampy area, so we hung the bags from a tree. However, we cut the bottom of the little bag and hung plastic bags (i.e. Wal-mart, etc.) from the top of the contraption. Hundreds of beetles, about two inches in the bottom of the bag, were attracted almost daily. I tied the bags and threw them in the trash every day (you can spray bug spray if necessary into the bag), trapping and killing thousands and changing out the bags! I did it all summer. I figured even if it did attract that year, it would be thousands that weren't breeding. Second, my husband got something called "milky spore," which is a fungus, from our gardening center. You put it on your lawn and it eventually spreads through the yard. (It's nothing you can see!) Anyway,the grubs eat or get infected by the fungus, the fungus spores burst inside of the grubs, killing the grubs and releases more spores into the soil. ANYWAY, we didn't have hardly beetles this last summer. So I don't know if that's why we had so few this year, or beetles are like locust and have a cycle!?

  29. Sorry,all. I got to thinking that you all were talking about the yummy tomato soup, and I bring up the disgusting topic of Japanese Beetles. But, this is the first time I've ever even looked at a blog like this, let alone joining in. I was just looking back through your blog, Jen, and happen to see the beetle pic. I was thinking spring and gardening after going to the home show! Again, sorry. Back to the soup!

  31. One little problem. Where's the "fire"? I definitely saw some dark flakes of either ancho or pasilla chili in that soup. Am I the only one?

  39. I was searching for a good tomato soup recipe and google returned this page. After reading through the recipe and seeing some of the reviews, I realized that the writer is a Hoosier! Imagine my surprise when I saw "Jen Kershner" because I am a friend of Jen Beck's and I believe you're her sister-in-law! What a small world. :) Anyway, thanks for the recipe.
